Solar Blanc-
An off dry white wine made with Vignoles and Traminette grapes. If you remember Snow Farm’s 25th Anniversary wine this wine is similar in many ways, being fruity and aromatic.

A special batch of Grappa was produced just for this occasion. The spirit connoisseur is sure to appreciate this unique beverage, made with skins from our Leon Millot grapes from the 2023 Snow Farm harvest.

Recipes and Pairings
BUTTERY MAPLE APPLE CAKE:
Ingredients
BUTTER APPLES:
- 3 apples (granny smith and macintosh), peeled, cored, cut into 1-inch cubes
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter, cut into 4 pieces
- 1/4 cup (Dark or Grade B) maple syrup
- 1/4 cup sugar
CAKE:
- 4 tablespoons room temperature unsalted butter
- 2 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 cup vegetable oil
- 1 3/4 cups maple syrup
- 3 large eggs, at room temperature
- 1 cup milk, at room temperature
DIRECTIONS:
- Toss apples with lemon juice and salt. In large skillet, melt butter over medium heat until starts to foam. Stir gently and cook until the foam subsides and solids start to brown.
- Add apples, syrup, and sugar and sauté until just tender, stirring occasionally. Remove from heat. With slotted spoon, transfer apples to plate, leaving juices in skillet.
- Adjust oven rack to middle position and preheat oven to 350°F. Grease 9-inch springform pan with butter. Line bottom of pan with parchment paper round and brush with butter.
- In medium bowl, whisk together flour, baking powder, baking soda, salt, ginger, and nutmeg; set aside.
- In large bowl, beat 4 tablespoons butter and oil on medium speed for ~2 to 3 minutes. Add maple syrup and continue beating until thick and pale, ~3 minutes. Add eggs, one at a time, beating well after each addition.
- Decrease speed to low and add flour mixture in three batches, alternating with milk. Scrape bowl with rubber spatula as needed. Increase speed to medium and beat mixture just until combined, 20 to 30 seconds.
- Scrape batter into prepared pan. Bake 30 minutes until top is set and beginning to brown. Top with apples and continue baking until cake tester inserted in center of cake comes out clean, 45 to 60 minutes longer.
- Transfer cake to cooling rack and cool in pan 10 minutes. Release and remove springform.
- Bring to simmer apple drippings over medium-high heat. Cook until thickened, bubbly, and reduced to about 1⁄4 cup. Immediately drizzle over cake along with more maple syrup (to taste).
- Cool cake for about 45 minutes and serve warm with ice cream and Snow Farm Apple Dessert Wine. Cake may also be cooled completely and served at room temperature.

WINERY AND DISTILLERY NEWS
Wine:
We are currently working on the wines you will be enjoying this summer! The quality of our grapes was excellent last fall and have turned into some delightful wines. We plan to make a dessert wine with some of the Vidal Blanc grapes we harvested and will keep you posted as to its progress. You can also look forward to another batch of Apple Dessert wine this year.
For the big eclipse in April we plan to have some special releases, both wine and spirits. Be sure to sign up for our newsletter for information about these specially labelled limited edition beverages.
Distillery:
We have also been hard at work in the production of more distillery products. It has been a good year to do a bit of experimenting and we will take advantage of the winter season to try some new batches of spirits.
If you haven’t gotten to try our newly released products: Gin, a very limited Grappa and a Maple Liqueur, I highly recommend you make the drive to South Hero to taste these one of a kind spirits.
Available now in our Tasting Room at 190 West Shore Road in South Hero, Vermont, our alcohol is made from our own grapes and we plan to continue to make a variety of spirits that will appeal to many.
